An Old Tom Gin Crafted for Montréal

Gin 375 was created in honour of Montréal’s 375th anniversary. It is a contemporary take on Old Tom gin, built from 100% Québec corn and a set of indigenous botanicals that include boreal plants, fruit from the Eastern Townships and honey from the Laurentian Mountains. Lightly sweetened, amber in colour and quietly complex.

Nose: Fresh and floral, with delicate sweetness and aromatic honey alongside hints of mint and soft fruit. 

Palate: Balanced and layered. Floral and fruity notes, including cranberry and sour cherry, sit over coniferous botanicals. Spring honey roundly ties the flavours together, while wild mint and gentle spice prevent the sweetness from feeling heavy.

Finish: Warm, slightly spicy and persistent, with honey, mint and forest notes that slowly recede rather than dropping away.

An Old Tom gin shaped by Montréal’s history

Gin 375 was conceived as a liquid homage to Montréal. To build it, the CIRKA team worked with a historian from Château Ramezay to identify plants that would have grown in the orchards, fields and medicinal gardens of the early settlers. From that research came a palette of Québec ingredients that could speak to both the city and the province.

The result is an Old Tom gin that uses Québec corn as its base, then layers in fruit, flowers, honey and boreal botanicals. A light touch of sweetness and an amber colour recall older styles of gin, yet the profile remains fresh, floral and easy to read in modern cocktails.

Old Tom Collins

A bright, citrus forward Collins that pairs Gin 375 with lemon, a measured sweetness and soda. The honeyed, floral notes of the gin give the drink more character than a classic Collins while keeping it just as refreshing.

Yul Spritz

Yul Spritz is a sparkling serve built on gin, white cranberry juice and champagne, garnished with cranberries and a small spruce branch. Gin 375’s berry and forest notes sit naturally in this combination, making it a composed apéritif for the holidays or any celebratory evening.

Montreal Fog

Montreal Fog reimagines a London Fog latte as a cocktail. Gin 375, honey, lemon and orange blossom water are brought together with a frothy texture and a gentle sparkle. The botanicals in the gin echo the tea and citrus notes that inspired the drink.

Gin 375 is part of CIRKA’s small gin family alongside Gin Sauvage and Navy Strength Gin. All three start with a base spirit distilled from Québec corn in Montréal, using a grain to bottle approach that keeps the work and the ingredients close to home.

For this Old Tom, the distillery leans into fruit, honey and forest botanicals, aiming for a gin that can be sipped neat, served with a quality tonic or built into cocktails where a slightly softer, more aromatic profile is needed.
