Whisky No.2 is the second release in CIRKA’s small batch whisky series. This four year single grain whisky is made from 100 percent local Quebec corn, matured in new American white oak and finished in a combination of ex rye and Sauternes casks. Bottled at 48 percent, with no added colour and no chill filtration, it is a bold, precise expression of how far a carefully matured corn whisky can go in both texture and complexity.

A Quebec single grain shaped by three casks
Whisky No.2 starts from a simple idea: let one grain speak clearly, then use wood to shape and layer it. It is a four year single grain whisky made entirely from Quebec corn, first matured in new American white oak for structure and vanilla, then finished in ex rye and Sauternes casks to draw out spice, fruit and subtle sweetness.
It is dry on the nose with notes of caramelized banana, tobacco and leather, then warm and rounded on the palate with spice, toasted bread and a finish that recalls flint and citrus. Triple cask aging and careful wood selection coax out subtle flavours without burying the grain.
One grain, three casks, one whisky
As the second whisky in CIRKA’s small batch series, Whisky No.2 shows a different side of what Quebec corn can do. Where other whiskies might hide behind heavy finishes, No.2 lets corn, oak and time do most of the work, then uses ex rye and Sauternes casks as a final tuning step.
On the shelf, it pours a natural golden colour with no added caramel. In the glass, you will find the dryness of a well made single grain, the rounded warmth of American white oak, the subtle spice echo of rye and the lifted fruit and gentle sweetness from Sauternes.
