A gin built from Quebec’s forests
Gin Sauvage is CIRKA’s flagship dry gin, built to capture the wild aromatic side of Quebec’s boreal forest. It starts with CIRKA’s own spirit base made from 100% local corn, then runs through a custom still and steam basket to gently extract botanical oils from 33 different plants, including juniper, pine needles, flowers and fruit.
The result is a gin that feels modern and layered: dry and structured like a London Dry, but with a clearly Quebec expression of forest, flowers and fruit.

Built on Quebec terroir, distilled in Montréal
CIRKA was the first grain-to-bottle distilleries in Québec, working directly with local producers and distilling everything on site in Montréal. Gin Sauvage follows that same approach: Quebec corn for the base spirit, and a line-up of mostly local botanicals to express the province’s boreal character.
To keep the flavours precise, the team uses its own alcohol base and a custom steam basket that lets warm vapours extract delicate botanical oils without cooking them. That technique is what makes Gin Sauvage silky, complex and controlled, with fruity, floral and conifer notes that feel intentional rather than loud.

It has clear conifer and forest notes, but they’re balanced with floral and fruity tones. The goal is boreal, not Christmas tree, which is why many people enjoy it neat or in martinis.

Yes. The texture is velvety and the finish warm, which makes it comfortable to sip straight or over a large cube, especially once it’s had a moment to open up in the glass.
Many boreal gins lean on an aggressive pine note. Gin Sauvage goes the other way: same boreal universe, but with a clean, dry, readable profile. You taste conifers without saturating the glass.
Any quality neutral or lightly citrus tonic works; you don’t need strong flavouring from the mixer because the gin already carries pine, floral and citrus notes.
