In 1833, Louis-Tancrède Bouthillier built a residence he named Outre-Mont, and it still stands today. Lady O is a vibrant, sophisticated gin sour inspired by that sense of history and timeless elegance. With Gin Sauvage, thyme syrup, pink grapefruit, and lemon, it drinks fresh and refined, made for raising a glass to tradition.

Ingredients

  • 1.5 oz Gin Sauvage

  • 0.75 oz Thyme Syrup (recipe below)

  • 1 oz Pink Grapefruit Juice

  • 0.75 oz Fresh Lemon Juice


How to Make It

  1. Add all ingredients to a shaker with ice.

  2. Shake hard until well chilled.

  3. Fine strain into a pre-chilled glass.

  4. Express lemon zest over the drink, then garnish with a thyme sprig.

  5. Optional: raise your pinky while you sip.


Thyme Syrup Recipe

  1. Combine 500 g sugar and 500 ml water in a pot over medium-low heat.

  2. Stir until the sugar dissolves, then add 5 thyme sprigs and simmer 10 minutes.

  3. Remove the sprigs, let cool, and strain.

  4. Store in an airtight container in the fridge for up to 1 month.


Pro Tips 

  • Why this gin works: Gin Sauvage brings a bold botanical backbone that stays defined against bright grapefruit and fresh thyme.

  • More aroma: Gently clap the thyme sprig before garnishing, then keep it close to the rim.

  • Best balance: Fresh pink grapefruit juice gives the cleanest sweet-tart edge. If your grapefruit is very sweet, use a touch less syrup.

  • Cleaner finish: Fine straining tightens the texture and keeps the citrus sharp.
