Ingredients

  • 0.75 oz Gin Sauvage

  • 1.5 oz Pomelo liqueur

  • 0.75 oz Rhubarb syrup

  • 1 oz Fresh lemon juice

  • Fin Soda Aperitivo Spritz, to top

  • Optional: 0.5 oz emulsifier (or egg whites) for a frothy, cloud-like texture


Method

  1. Add Gin Sauvage, Pomelo, rhubarb syrup, and lemon juice to a shaker filled with ice.

  2. Shake vigorously until well chilled.

  3. Full pour into a tall glass or Bordeaux wine glass, keeping the ice. Add more ice if needed.

  4. Top with Fin Soda Aperitivo Spritz.

  5. Garnish with a citrus wheel or a fresh rhubarb ribbon.
