
Inspired by the Clover Club cocktail, the Crimson Clover is a striking cocktail that balances the tart sweetness of raspberries with the resinous spice of green alder. Creamy egg white gives it a luxurious texture, while Gin 375 anchors it with crisp botanicals. A perfect bridge between forest aromatics and berry fields.

Ingredients

2 oz Gin 375

0.75 oz Raspberry & green alder syrup

0.75 oz Fresh lemon juice

1 Egg white
Method

Combine all ingredients in a shaker without ice (dry shake) for 10–12 seconds.

Add ice and shake vigorously again (wet shake) until chilled and frothy.

Fine strain into a chilled glass filled with fresh ice.
- Garnish with fresh local raspberries.
Raspberry & Green Alder Syrup

Combine 500g sugar and 500ml water in a saucepan over medium-low heat, stirring until dissolved.

Add ½ pint fresh raspberries and 6g green alder catkins (or substitute with green peppercorns).

Let simmer gently for 30–45 minutes.

Remove solids, cool, then fine strain.

Store in an airtight container in the fridge for up to 1 month.
Pro Tips

Use a reverse dry shake (shake with ice first, strain, then shake again without ice) for an even silkier foam.

Try swapping lemon juice for verjus when available, for a softer acidity.
