Lady O is a vibrant, sophisticated gin sour inspired by that sense of history and timeless elegance. With Gin Sauvage, thyme syrup, pink grapefruit, and lemon, it drinks fresh and refined, made for raising a glass to tradition.

1.5 oz Gin Sauvage

0.75 oz Thyme Syrup (recipe below)

1 oz Pink Grapefruit Juice

0.75 oz Fresh Lemon Juice
How to Make It

Add all ingredients to a shaker with ice.

Shake hard until well chilled.

Fine strain into a pre-chilled glass.

Express lemon zest over the drink, then garnish with a thyme sprig.

Thyme Syrup Recipe

Combine 500 g sugar and 500 ml water in a pot over medium-low heat.

Stir until the sugar dissolves, then add 5 thyme sprigs and simmer 10 minutes.

Remove the sprigs, let cool, and strain.

Store in an airtight container in the fridge for up to 1 month.
