A festive, silky cocktail perfect for the holidays. Gin meets raspberry-thyme syrup, a touch of white crème de menthe, and a velvety froth for a luxurious seasonal sip. Garnished with fresh thyme and raspberries, it’s both beautiful and indulgent.

Ingredients

  • 2 oz Gin 375 or Gin Sauvage

  • 0.5 oz White crème de menthe

  • 0.5 oz Fresh lemon juice

  • 1 oz Raspberry & thyme syrup (see recipe below)

  • 1 oz Emulsifier (egg white or alternative)

  • Garnish: Fresh raspberries and thyme sprigs


Raspberry & Thyme Syrup

  1. Mix 1 part raspberry jam with 1 part boiling water to liquefy.

  2. Add fresh thyme sprigs to taste.

  3. Let infuse overnight, strain, and store in the fridge.


Method

  1. Add all ingredients to a shaker filled 1/3 with ice.

  2. Shake vigorously until frothy and chilled.

  3. Double strain into a coupe glass, leaving ice behind.

  4. Let the frothy layer settle on top.

  5. Garnish with fresh raspberries and thyme sprigs or festive decorations of your choice.


Pro Tips

  • Velvety foam: Use egg white or your preferred emulsifier for a creamy texture.

  • Make-ahead syrup: Prepare the raspberry-thyme syrup the day before to deepen flavors.

  • Layer aromatics: Lightly press thyme into the froth for aroma on the first sip.
