Ingredients

2 oz Gin 375 or Gin Sauvage

0.5 oz White crème de menthe

0.5 oz Fresh lemon juice

1 oz Raspberry & thyme syrup (see recipe below)

1 oz Emulsifier (egg white or alternative)

Garnish: Fresh raspberries and thyme sprigs
Raspberry & Thyme Syrup

Mix 1 part raspberry jam with 1 part boiling water to liquefy.

Add fresh thyme sprigs to taste.

Let infuse overnight, strain, and store in the fridge.
Method

Add all ingredients to a shaker filled 1/3 with ice.

Shake vigorously until frothy and chilled.

Double strain into a coupe glass, leaving ice behind.

Let the frothy layer settle on top.
